Use our GoodHealthy radishes to make the world’s best salsa for today’s festivities. Serve with our recipe for roasted chickpea tacos and it may all you ever need again, or at least until tomorrow.
RADISH SALSA
1 cup diced radishes
1 fresh jalapeño, deseeded, deveined and diced
1/4 cup red onion, diced
4 - 5 radish greens, finely chopped
Big pinch sea salt
1/2 lime
1. Combine radishes, jalapeño, onion and radish greens in a small bowl
2. Add sea salt and the juice of 1/2 lime and mix to combine 3. Taste test and add additional salt and/or lime juice to your preference
ROASTED CHICKPEA TACOS
1 can chickpeas, rinsed and rained
1 tablespoon olive oil
1/2 teaspoon curry powder
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon salt
Additionally:
Radish salsa
Shredded red cabbage
Flour tortillas or savoy cabbage leaves
Sour cream
Sliced avocado
Fresh limes
1. Preheat oven to 425°
2. Remove loose skins from chickpeas and pat dry, then place in a large plastic zip top bag
3. Drizzle in olive oil, then add spices and shake well to combine 4. Transfer chickpeas to a large baking sheet and bake in a single layer for 25 minutes, tossing once about half way through
5. Allow chickpeas to cool slightly, then portion onto small flour tortillas or savoy cabbage leaves
6. Add shredded red cabbage
7. Garnish with radish salsa, slices of avocado, fresh lime juice and sour cream
